We had a bit of a freezer mal-function yesterday. We aren't sure if our chest freezer is dying already( its about 1.5 weeks old!!!) or if the energy tag( that I totally forgot to remove) got in the way of the lid closing properly but either way I had 2 packs of chicken breasts that got partially defrosted. So I made 3 pans of enchiladas. One is for dinner and the other 2 went in the freezer for a night when I don't feel like cooking.
